Peppermint Patties, too

Happy Valentine's Day, or whatever.

We made these peppermint patties the other night, inspired by Darby's post here (and subsequent re-try).



If you make them yourself, heed the following:

We pretty much followed the recipe, except doubled it, and there was no way we were going to get all of that powdered sugar mixed in there. We just put as much as the ole KitchenAid could handle (I would NOT recommend trying this with a hand-held mixer).

Also be sure to freeze the minty fillings after they're shaped and before dipping in chocolate. I don't see how hardening at room temp for 2 hours would really cut it.



They're definitely a project, but well worth it I'd say. REALLY hit the spot the past couple of days.

We got a lot of work done around the ole abode this weekend...way more activity (outside of work, that is) than I've been able to do for weeks/months. Finally feeling a bit better, if still really tired.

We played closet musical chairs to get ready for bebe (and thanks to Grant, again, for the closet build-out help--invaluable). Tons more to do. I am a messy pack rat, apparently.
