Our Go-To Salad

I posted about this salad last summer, but there were no pictures, and it was kinda a first-timer.

Since that post, we've probably had this salad for dinner about 32203894023984 times. It's a definite easy dinner solution when you're having people over and you basically only have time to stop by the store on your way home from work instead of cooking an elaborate meal.

Also, I've told you before that Jonathan doesn't really "love" a ton of food. And he really likes this salad. It's fresh, quick, easy, includes meat, and is very tasty.

As this is the first meal I've "made" in the new house, I stopped by the store to just get the items for dinner, and forgot the Granny Smith apple. [And the dressing. Whoops (Jonny picked that one up for me). ]

Start off by shredding a rotisserie chicken, and slice up some strawberries.

After mixed with spring mix lettuce, Newman's Own poppyseed dressing, slivered almonds, and black pepper:

Our first meal at home.

[never too far from the ginormous washer/dryer, either! watching laundry spin around while you eat is a definite treat.]

Really Good Salad:

spring mix lettuce
rotisserie chicken, shredded
sliced strawberries
sliced Granny Smith apples
feta cheese
golden raisins (optional)
slivered almonds (optional)
poppyseed dressing

Mix together.

I'm not sure this really counts as cooking.

[if you wanna try to fool people that you have over for dinner, make beer bread to go with it (also extremely easy), and yogurt pie (have I posted about that? also ridiculously easy). Three "homemade" items, and they don't feel gypped.]

    it's nice you and your husband can enjoy a salad for dinner.


  2. Yummy! Try with bleu cheese too. Bleu cheese + granny smith apples + chicken is awesome, whether on a salad or a sammy.

  3. that salad sounds and looks wonderful! Anything with strawberries and feta has to be good.

  4. I love it when you make this salad, but for some reason I don't have the same delicious results!

    Still trying to figure out what I am doing wrong. I mean, its salad for goodness sake. Whats wrong with me! :)

  5. this poppy seed dressing is amazing. i eat is almost every day for lunch. yummy! :)

    whole foods has amazing cinnamon sugar pecans that I throw in a similar salad. and let me tell you something, you won't regret it.

  6. Tried this for lunch today and it was a hit! Yum-o! It's sure to be a Nowlin household staple from now on!
